Easy Vegan Peanut Butter Cookies

This peanut butter cookie recipe is super simple, vegan and only contains 3 ingredients which you can get in every shop…. No need to go on the hunt for niche ingredients here! Plus you can whip these up from start to finish in just 15 mins!

These sugar-free vegan cookies are the perfect little snack with a cup of tea, as a lunchbox filler or I think they’re a perfectly acceptable breakfast food… I mean there is oats in there 😉

I like to use smooth vegan peanut butter for these cookies, but you could totally use crunchy and/or any other nut butters – Almond butter works really well.

 

RECIPE FOR VEGAN PEANUT BUTTER COOKIES

  • Bake time: 10 mins
  • Makes 9 cookies

METHOD

  • Smooth out the peanut butter by giving it a little mix. You could do this on a low heat in a pan if your nut butter is a bit solid.

  • Mix in the oats and try to get as much of the peanut butter to cover the oats… It will be quite a dry and lumpy consistency at this point.

  • Add a splash of your favourite dairy free milk. (I like to use unsweetened almond milk for these). Use the milk to bind the mixture together, still keeping it quite dry and dough-like.

  • Scoop out 1 tablespoon portions and shape with hands.

  • Place on a tray and bake for 10 mins. No need to grease the tray as the peanut butter prevents them from sticking… Saves you some time!

 

You can make these more crumbly by using less milk and a few more oats, or more soft and chewy by using more milk. Another option is to add some sugar free maple syrup or even a few raisins if you need a little sweetness in your life!
