Easy, vegan creamy mushroom and spinach pasta, served with garlic and chilli tender stem broccoli.
I came up with this easy , vegan pasta dish over the weekend when we didn’t have many ingredients in the house. As simple as this dairy free vegan mushroom sauce is, it has loads of flavour!
This simple vegan meal takes about 15mins to prep and cook, so is a great dish for a quick lunch or dinner. I served ours with tender stem broccoli which was fried lightly in olive oil, chilli and garlic, but you could serve on it’s own, with garlic bread or even a simple side salad.
This easy, vegan creamy mushroom sauce can be used for other dishes too, if you’re not the biggest fan of pasta, try over seitan , rice or courgetti! This dish will also keep for a couple of days in the fridge, so also great for vegan meal prep!
The below ingredients for this recipe makes a good amount of creamy pasta sauce for 2 portions of pasta.
INGREDIENTS for vegan creamy mushroom and spinach pasta:
10-12 mushrooms
2 big handfuls of fresh spinach
1 small onion
2-3 cloves of garlic
Olive oil
Dried tarragon
Vegetable stock cube
Dairy free single cream – I use this one
2 tablespoons of nutritional yeast flakes
Wholewheat pasta or whatever pasta you prefer
Salt and pepper
METHOD for vegan creamy mushroom and spinach pasta:
Finely chop the mushrooms and onion then fry in olive oil. Add crushed garlic cloves and cook down for a few minutes.
Add in about three quarters of the vegan single cream and stir. Whilst on a medium heat add a crumbled vegetable stock cube and tarragon. Allow the sauce to simmer and add the nutritional yeast flakes to help thicken. Add the rest of the cream if it is starting to get a bit too thick.
A few minutes before serving add in the spinach to cook down, more tarragon and salt and pepper to taste. Once the pasta is cooked, drain, then add to the mushroom sauce and stir through so the pasta is evenly coated.
Serve with your favourite side dish and enjoy 🙂
